"The recipes, 450 in all, are both generic and unique to their locale. There is also a 'universal fish table' or seasonal calendar for 23 varieties of fish, and a 10-page index arranged by category: fish, puddings, pies and cakes, pickles, wine, sauces, 'made dishes' &c.&c. Just a few of many unusual recipes: pigeons in a hole; to turtelize calves head; everlasting syllabub; Isinglass flummery; to candy angelica; artificial ape's milk; black butter; and many more. Also 10 pages devoted to wine and beer. A good many recipes are identified, Mrs. Hodges being the most frequent contributor, but also, for example, 'Mr. Hamilton, Barham Court' (a suburb of Canterbury); 'Mrs. Halford, Paddock' (an estate in Canterbury) and so on. This is one of the nicest cookery manuscripts of the period we have acquired: coherent, complete, identified, well preserved, and attractive." (From bookseller's catalog.)
