Savor a taste of wild Australia! This program will extend students' knowledge, cultural awareness, and understanding as it explores the relatively recent culinary move toward Australian bush food. It looks at the different fruits, herbs, and spices that have been part of the Australian Aboriginal diet for thousands of years, explains traditional uses of some indigenous foods, and shows how some cooks are combining them into modern meals. A native garden and the range of products sold at markets and fairs, as well as a commercial-scale operation, are discussed. Preparation methods are highlighted in a visit to a restaurant kitchen where a chef demonstrates how to make a simple meal and gives tips on the best uses of native ingredients.
